A wonderful interview. Such thoughtful answers, no tiresome skimming-the-surface "You should be here on Sake Thursdays, the waiters get crrrazy!" puff-piece. Bun is perhaps one of the most genuinely good human beings I've ever come to know in my life. I don't say that flippantly either. Miya's has evolved into a really special place over the years, and I do truly feel like my soul is well-fed when I've spent an evening not only with such amazing cuisine, but with Bun and the soulful atmosphere he's fostered there. Great article!
